Hash Brown Breakfast Cups

A great way to start the day! These muffins are great straight from the oven or reheated in the microwave.


  • Hash browns; if frozen, thaw
  • Eggs, whisked
  • Turkey Bacon, cooked
  • Reduced Fat Sharp Cheddar Cheese
  • salt and pepper to taste


  1. Preheat oven to 425
  2. spray muffin pan with cooking spray
  3. press 1/4 cup of hash browns into each muffin cup
  4. spray hash browns with cooking spray
  5. bake for 10 - 15 minutes until golden
  6. while baking the hash browns, finely chop the bacon
  7. scramble the eggs
  8. remove muffin pan from Oven
  9. add bacon to each cup
  10. add scrambled eggs
  11. top with 1 TBS cheese
  12. bake for 5 minutes or until cheese is melted
  13. remove oven and serve
