A great way to start the day! These muffins are great straight from the oven or reheated in the microwave.
Ingredients
- Hash browns; if frozen, thaw
- Eggs, whisked
- Turkey Bacon, cooked
- Reduced Fat Sharp Cheddar Cheese
- salt and pepper to taste
Instructions
- Preheat oven to 425
- spray muffin pan with cooking spray
- press 1/4 cup of hash browns into each muffin cup
- spray hash browns with cooking spray
- bake for 10 - 15 minutes until golden
- while baking the hash browns, finely chop the bacon
- scramble the eggs
- remove muffin pan from Oven
- add bacon to each cup
- add scrambled eggs
- top with 1 TBS cheese
- bake for 5 minutes or until cheese is melted
- remove oven and serve
